Katsuo bushi (bonito flakes)

I tried some katsuo bushi today. They are fish flakes. No, not fish food…well, actually, yeah, they are kind of like large fish food flakes for humans. They are dried bonito that are shaved really thin with a wood plane. They end up being very light and flavorful. You can often find them dancing on okonomiyaki or takoyaki from the heat of the food. They are also used to make dashi. I tried some sprinkled on my rice and they were different. Quite flavorful, but a new texture for me. I wasn’t too fond of it at the beginning but ended up liking it more when Daddy mixed the flakes into my rice.
